+1 for Jing.
I've found Jing to be fantastic for creating demo videos. I've used it
over and over because it's just so easy. However, if you need to edit
video, add music, add text, or make a video longer than 5 minutes
(Jing has 5-minute limit) you'll need a more advanced screencasting
app. There are several good apps for Mac, and maybe one for Windows. I
don't know about Linux screencasting options.
