If you have a Mac, there's Garage Band, and iMovie (for video  
podcasts). It's not open source, I know, but it comes free with the OS.

For open source, I've heard of Podcast generator. It uses PHP, so I  
have to throw it in there. It installs on your server, runs in the  
browser. It's at http://podcastgen.sourceforge.net/.
